Henderson's Salads

Adapted from the Henderson's recipe books from their original shop. Make a simple dressing to add to your greens or if you're feeling a little fancier try one of our go-to salad recipes Henderson's Book of Salads.

Salad 1:

French Dressing: 

  • 3/12 tablespoons good quality olive oil
  • 1 tablespoon white wine vinegar
  • Small pinch of salt and pepper
  • 1 tsp whole gran mustard
  • 1 tsp. honey
  • Dash of balsamic vinegar

Method: Mix all ingredients together in a clean dressing bottle, replace the lid and shake well. 

Salad 2:

Herb Salad with Orange and Ginger


  • Your choice of greens (enough to fill a medium salad bowl) eg oak leaf, rocket watercress, round lettuce (arugula, spinach, claytonia etc.)
  • The fruit segments and zest of an orange
  • A generous sprinkle of herbs eg chives, flat-leaf parsley, nasturtium etc. 
  • 4oz feta cheese, crumbled 
  • 5 tablespoons of olive oil
  • 1 tablespoon of balsamic vinegar
  • Small pinch of salt
  • Freshly milled black pepper
  • 1 tsp honey
  • 1 tsp sesame seeds
  • 1/4 tsp peeled, finely grated ginger

Mix all ingredients together and serve.
