This Week
This week is the beginning of Spring and also Earth Day!
This week we are featuring recipes from one of our recipe contributors (more on that soon) and former box curator, Julia! She picked an early summer brunch with an apple compote (which we’re ready to put on top of everything), buckwheat pancakes and a hash.
I am not usually a pancake kind of gal but Julia’s convinced me otherwise. These could easily be made savory and you can freeze the leftovers and pop them in the toaster (or microwave) to reheat!
A hash is a great wallet saving and often food waste saving food to eat. If you have vegetables in your fridge you are trying to use up and or/have too many or try to toss them into a hash. One of the best things you can do for the environment (and your wallet) is to not waste food.
Smoothies, frittatas, quiches and porridges/oatmeal are another great way to use up what you have left in your fridge.
We are featuring a selection of root vegetables along with delicious apples, buckwheat flour from Fairhaven Mills and a special spring treat. P.s. We have buttermilk listed for the pancakes and we HIGHLY recommend it.
